Description

Delicious clusters of toasted pecans, gooey caramel, and rich chocolate that are simple to make and perfect for gifting.


Ingredients

Scale
  • 2 cups pecans
  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup heavy cream
  • 12 oz chocolate (dark or milk)
  • Flaky sea salt (optional)

Instructions

  1. Preheat the oven to 325°F (163°C) and toast the pecans for 5–7 minutes.
  2. In a saucepan, combine butter, brown sugar, and heavy cream; cook over medium heat until the mixture reaches 234–240°F (soft-ball stage).
  3. On a parchment-lined sheet, form small clusters of pecans.
  4. Spoon hot caramel over the pecan clusters and chill for 20–30 minutes until set.
  5. Melt the chocolate and drizzle or fully coat the pecan clusters.
  6. Chill again until the chocolate is set. Serve or store appropriately.

Notes

Keep an extra saucepan of warm water handy to reheat caramel if it cools too much during assembly.
