Ingredients

  • 810 inch flour tortillas
  • 1 cups shredded cheese (cheddar or Mexican blend)
  • ½ cup salsa or enchilada sauce
  • 12 cups shredded chicken or seasoned ground beef or spiced beans
  • Vegetable oil for frying

Instructions

  1. Prepare a filling by mixing chicken, beef, or beans with cheese and salsa.
  2. Warm tortillas briefly in a skillet to make them pliable.
  3. Place filling near one edge of the tortilla, fold sides in, and roll tightly.
  4. For frying, heat oil to 350°F (175°C) and fry chimichangas until golden, about 2-3 minutes per side.
  5. For baking, brush with oil and bake at 425°F (220°C) for 15-20 minutes, flipping once.
