- 2 cups shredded sweetened coconut
- 1/2 cup sweetened condensed milk
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 12 blanched whole almonds
- 8 ounces semi-sweet chocolate (60-70% cacao)
Instructions
- Mix the shredded coconut, sweetened condensed milk, powdered sugar, salt, and vanilla extract in a bowl.
- Press the coconut mixture into small logs or rounds.
- Chill the shaped mixture for about 60 minutes until firm.
- Insert a blanched almond into each piece.
- Dip each piece in melted chocolate, ensuring it’s cooled to avoid bloom.
- Chill again until the chocolate sets.
Notes
Toast coconut lightly at 325°F for 5–7 minutes for enhanced flavor. Use good quality chocolate for the best results.
