Description

A delightful cheesecake that combines the creamy richness of cheesecake with the crunch of pistachios and sweetness of white chocolate, perfect for special occasions.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 8 oz white chocolate, melted
  • ½ cup finely chopped pistachios
  • Extra chopped pistachios for garnish
  • White chocolate drizzle for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter until combined. Press this mixture into the bottom of a springform pan to form the crust.
  3. In a mixing bowl, blend cream cheese, sugar, and vanilla until smooth. Beat in eggs one at a time, being careful not to overmix.
  4. Fold the melted white chocolate and chopped pistachios into the cream cheese mixture until well combined.
  5. Pour the cheesecake filling over the crust and smooth out the top.
  6. Bake for about 60 minutes or until the edges are set and the center has a slight jiggle.
  7. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool slowly.
  8. Chill in the refrigerator for at least 4 hours before serving.
  9. Garnish with extra pistachios and a drizzle of white chocolate before slicing and serving.
