- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- 8 oz white chocolate, melted
- ½ cup finely chopped pistachios
- Extra chopped pistachios for garnish
- White chocolate drizzle for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs with melted butter until combined. Press this mixture into the bottom of a springform pan to form the crust.
- In a mixing bowl, blend cream cheese, sugar, and vanilla until smooth. Beat in eggs one at a time, being careful not to overmix.
- Fold the melted white chocolate and chopped pistachios into the cream cheese mixture until well combined.
- Pour the cheesecake filling over the crust and smooth out the top.
- Bake for about 60 minutes or until the edges are set and the center has a slight jiggle.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool slowly.
- Chill in the refrigerator for at least 4 hours before serving.
- Garnish with extra pistachios and a drizzle of white chocolate before slicing and serving.
