Description

A moist and flavorful carrot cake loaf with a delightful cream cheese surprise in the middle, perfect for any occasion.


Ingredients

  • 2 cups grated carrots
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the eggs, oil, vanilla extract, and grated carrots until well combined.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. In a separate bowl, beat the cream cheese with the powdered sugar until smooth.
  6. Pour half of the carrot cake batter into the prepared loaf pan.
  7. Spread the cream cheese filling over the batter, then top with the remaining carrot cake batter.
  8. Bake for 50 minutes or until a toothpick comes out clean when inserted into the center.
  9. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
