Ingredients

  • 1/3 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla extract
  • 1 egg yolk
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips

Instructions

  1. Brown the butter in a saucepan until nutty and fragrant, then let it cool for a couple of minutes.
  2. Stir in pumpkin puree, brown sugar, cinnamon, and vanilla extract.
  3. Add the egg yolk and mix well.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Fold the dry ingredients into the wet mixture until combined.
  6. Stir in chocolate chips.
  7. Chill the dough in the refrigerator for at least 30 minutes.
  8. Scoop portions onto a baking sheet and bake until edges are set and centers look slightly gooey, about 10-12 minutes.
  9. Let cool for a few minutes before serving.

Notes

Chill the dough to prevent cookies from spreading too thin. Using just egg yolk keeps them chewy.
