A hearty and nutritious ground beef vegetable soup perfect for chilly days, filled with healthy vegetables and lean beef.

Ingredients

  • 1 pound lean ground beef
  • 4 cups water
  • 1 (28-ounce) can diced tomatoes (with juice)
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped green beans (fresh or frozen)
  • 1 cup chopped celery
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 bay leaf
  • Optional: 1 cup spinach or kale
  • Optional: 1 teaspoon Italian seasoning

Instructions

  1. In a large pot over medium-high heat, cook the ground beef until browned. Drain any excess grease.
  2. Stir in the onion, carrots, celery, and green beans. Cook for 5–7 minutes until slightly softened.
  3. Pour in the diced tomatoes with juice and add the water. Add salt, black pepper, garlic powder, and the bay leaf. Stir well.
  4. Bring to a boil, then reduce heat and simmer for 30–40 minutes, stirring occasionally.
  5. If using, stir in spinach or kale during the last 5 minutes of cooking.
  6. Remove the bay leaf, adjust seasoning as needed, and serve hot with bread or salad.

Notes

Use fresh vegetables for the best flavor and texture. Feel free to add any of your favorite vegetables. Adjust the seasoning according to your taste.
