Ingredients

- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 potatoes, diced
- 1 cup frozen peas
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper, to taste
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked.
- Add the diced onions and minced garlic, and sauté until the onions are translucent.
- Stir in the diced carrots and potatoes, cooking for an additional 5 minutes.
- Add the beef broth, tomato paste, thyme, parsley, salt, and pepper to the pot.
- Bring to a boil, then reduce heat and let simmer uncovered for 30-40 minutes until vegetables are tender.
- Serve hot, garnished with fresh parsley.
Notes
For extra flavor, consider adding a splash of vinegar or lemon juice before serving. This stew is even better the next day as the flavors meld.
