Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 potatoes, diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper, to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add the diced onions and minced garlic, and sauté until the onions are translucent.
  3. Stir in the diced carrots and potatoes, cooking for an additional 5 minutes.
  4. Add the beef broth, tomato paste, thyme, parsley, salt, and pepper to the pot.
  5. Bring to a boil, then reduce heat and let simmer uncovered for 30-40 minutes until vegetables are tender.
  6. Serve hot, garnished with fresh parsley.

Notes

For extra flavor, consider adding a splash of vinegar or lemon juice before serving. This stew is even better the next day as the flavors meld.
