- 1 lb bone-in, skin-on chicken thighs
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups chicken broth
- 1 cup small pasta (like ditalini)
- Fresh basil, for garnish
- Fresh parsley, for garnish
- Parmesan cheese, for serving
- Olive oil for drizzling
Instructions
- In a large pot, heat some olive oil over medium heat. Sauté the onion and garlic until fragrant.
- Add the chicken thighs and brown on all sides, about 5 minutes.
- Incorporate the carrots, celery, and zucchini; stir to combine.
- Add the diced tomatoes, chicken broth, and green beans. Bring to a boil.
- Reduce heat and simmer for 20 minutes, or until chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Add the pasta and cook according to package instructions until al dente.
- Season with salt, pepper, and Italian seasoning to taste. Garnish with fresh herbs and serve with Parmesan cheese.
Notes
For a gluten-free option, substitute regular pasta with gluten-free pasta or quinoa. This recipe is also easily adaptable for vegetarian by using chickpeas instead of chicken.
