Ingredients

  • 1 lb bone-in, skin-on chicken thighs
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups chicken broth
  • 1 cup small pasta (like ditalini)
  • Fresh basil, for garnish
  • Fresh parsley, for garnish
  • Parmesan cheese, for serving
  • Olive oil for drizzling

Instructions

  1. In a large pot, heat some olive oil over medium heat. Sauté the onion and garlic until fragrant.
  2. Add the chicken thighs and brown on all sides, about 5 minutes.
  3. Incorporate the carrots, celery, and zucchini; stir to combine.
  4. Add the diced tomatoes, chicken broth, and green beans. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes, or until chicken is cooked through.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Add the pasta and cook according to package instructions until al dente.
  8. Season with salt, pepper, and Italian seasoning to taste. Garnish with fresh herbs and serve with Parmesan cheese.

Notes

For a gluten-free option, substitute regular pasta with gluten-free pasta or quinoa. This recipe is also easily adaptable for vegetarian by using chickpeas instead of chicken.
