Instructions
- Sauté the diced andouille sausage in a large pot until golden brown.
- Add the chopped onion, celery, bell pepper, and minced garlic, cooking until the vegetables soften.
- Stir in the diced potatoes, broth, and Cajun seasoning. Season with salt and pepper.
- Bring the mixture to a simmer and cook until the potatoes are tender, about 25 minutes.
- Blend part of the soup for a creamy texture (or mash some potatoes with a fork).
- Serve in bowls garnished with chopped green onions and a dollop of sour cream, if desired.
Notes
For a vegetarian option, substitute the sausage with smoked tempeh or omit it and use smoked paprika instead.
