Ingredients

  • 1 lb andouille sausage, diced
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 large Yukon gold potatoes, diced
  • 4 cups low-sodium chicken or vegetable broth
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sour cream for serving (optional)

Instructions

  1. Sauté the diced andouille sausage in a large pot until golden brown.
  2. Add the chopped onion, celery, bell pepper, and minced garlic, cooking until the vegetables soften.
  3. Stir in the diced potatoes, broth, and Cajun seasoning. Season with salt and pepper.
  4. Bring the mixture to a simmer and cook until the potatoes are tender, about 25 minutes.
  5. Blend part of the soup for a creamy texture (or mash some potatoes with a fork).
  6. Serve in bowls garnished with chopped green onions and a dollop of sour cream, if desired.

Notes

For a vegetarian option, substitute the sausage with smoked tempeh or omit it and use smoked paprika instead.
