- 1 cup pitted dates
- 2 large eggs
- 1/2 cup almond butter (or peanut butter)
- 1/2 cup cocoa powder
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1/3 cup dark chocolate chips (optional)
Instructions
- Soak the dates in warm water for 10-15 minutes if they are tough or dry.
- Preheat the oven to 350°F (175°C).
- Drain the dates and blend them with eggs and nut butter in a food processor until mostly smooth.
- Add cocoa powder, vanilla extract, baking soda, and salt. Blend again until well mixed.
- Fold in chocolate chips gently with a spatula.
- Line a baking dish with parchment paper and spread the batter evenly.
- Bake for 18-22 minutes until the top looks set.
- Let cool, slice, and enjoy!
Notes
For a vegan version, substitute eggs with two flax eggs. Taste the batter and adjust sweetness if desired by adding more dates.
