A delightful and healthy twist on classic Chinese lemon chicken, combining tender chicken with vibrant lemon flavors.

  • Total Time: 37 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 lb boneless skinless chicken breasts (about 34 breasts)
  • 4 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp olive oil or sesame oil

Instructions

  1. Cut the chicken breasts into bite-sized pieces.
  2. In a bowl, mix soy sauce, honey, lemon juice, and minced garlic. Marinate the chicken in this mixture for at least 30 minutes.
  3. Heat oil in a skillet over medium heat and cook the marinated chicken for about 5-7 minutes until golden brown.
  4. In a separate bowl, combine cornstarch with water until smooth. Add to the skillet along with any leftover marinade; stir until thickened.
  5. Serve over steamed rice or vegetables and garnish with green onions or sesame seeds.

Notes

Marinate the chicken longer for enhanced flavor and adjust the sweetness of the dish by changing the amount of honey used.
