- 1 lb boneless skinless chicken breasts (about 3–4 breasts)
- 4 cloves fresh garlic, minced
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 1/4 cup freshly squeezed lemon juice (about 2 lemons)
- 1 tbsp cornstarch mixed with 2 tbsp water
- 1 tbsp olive oil or sesame oil
Instructions
- Cut the chicken breasts into bite-sized pieces.
- In a bowl, mix soy sauce, honey, lemon juice, and minced garlic. Marinate the chicken in this mixture for at least 30 minutes.
- Heat oil in a skillet over medium heat and cook the marinated chicken for about 5-7 minutes until golden brown.
- In a separate bowl, combine cornstarch with water until smooth. Add to the skillet along with any leftover marinade; stir until thickened.
- Serve over steamed rice or vegetables and garnish with green onions or sesame seeds.
Notes
For extra flavor, consider adding a splash of rice vinegar to the marinade. Do not overcrowd the skillet when cooking the chicken for better browning.
