A healthier twist on traditional Chinese lemon chicken with fresh flavors and wholesome ingredients.

Ingredients

  • 1 lb boneless skinless chicken breasts (about 34 breasts)
  • 4 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp olive oil or sesame oil

Instructions

  1. Cut the chicken breasts into bite-sized pieces.
  2. In a bowl, mix soy sauce, honey, lemon juice, and minced garlic. Marinate the chicken in this mixture for at least 30 minutes.
  3. Heat oil in a skillet over medium heat and cook the marinated chicken for about 5-7 minutes until golden brown.
  4. In a separate bowl, combine cornstarch with water until smooth. Add to the skillet along with any leftover marinade; stir until thickened.
  5. Serve over steamed rice or vegetables and garnish with green onions or sesame seeds.

Notes

For extra flavor, consider adding a splash of rice vinegar to the marinade. Do not overcrowd the skillet when cooking the chicken for better browning.
