Ingredients

- 2 Ceylon cinnamon sticks (about 3 inches each) or 1 heaping teaspoon ground Ceylon cinnamon
- 2 cups water
- Optional: 1 to 2 teaspoons honey or maple syrup
- Optional: a squeeze of lemon, a slice of fresh ginger, or a few cloves
Instructions
- Add water and cinnamon sticks to a small saucepan.
- Bring to a gentle boil, then reduce to a steady simmer for 10 to 12 minutes (5 to 7 minutes for ground cinnamon).
- Turn off the heat and let it rest for 2 minutes.
- Strain into your mug and sweeten to taste, if desired.
- Enjoy warm!

Use quality Ceylon sticks for a smooth flavor. For stronger tea, add another stick instead of increasing the cooking time.
