Description

A hearty and nostalgic Corned Beef & Potato Bake that is easy to prepare and perfect for cozy nights.


Ingredients

Scale
  • 4 medium potatoes, thinly sliced
  • 1 large onion, sliced
  • 1 can of corned beef, diced
  • 1 cup beef stock
  • 1 carrot, diced (optional)
  • Salt and pepper, to taste
  • Grated cheese, for topping (optional)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a baking dish, layer the sliced potatoes, onions, and corned beef. Add the diced carrot if using.
  3. Pour the beef stock evenly over the layers until just covered.
  4. Season with salt and pepper, then top with grated cheese if desired.
  5. Cover the dish with foil and bake for 1 hour.
  6. Remove the foil and bake for an additional 30 minutes until golden and bubbling.

Notes

Feel free to add other vegetables or proteins like sausages for extra heartiness. This dish can also be enjoyed with mustard on the side.
