A healthy and filling bowl combining lean ground beef, sweet potatoes, and creamy cottage cheese, perfect for any meal.

Ingredients

  • 1 lb Ground beef
  • 1 large Sweet potato, peeled and diced
  • 1 cup Cottage cheese
  • 1/2 cup Onion, chopped
  • 2 tbsp Olive oil
  • 1 tsp Chili powder
  • 1/2 tsp Cumin
  • 1/4 tsp Garlic powder
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potato with 1 tablespoon of olive oil, salt, and pepper in a bowl. Spread the sweet potato on a baking sheet and roast for 20-25 minutes, or until tender.
  3. While the sweet potato roasts, heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Add the ground beef and chopped onion. Cook until browned and the onion is soft. Drain excess grease.
  4. Stir in chili powder, cumin, and garlic powder. Season with salt and pepper to taste. Cook for 2-3 minutes to let the spices bloom.
  5. To assemble the bowls, layer the cooked sweet potato, ground beef mixture, and cottage cheese in individual bowls.
  6. Top with any desired toppings such as shredded cheese, salsa, avocado, sour cream, or green onions.

Notes

Make sure to cut the sweet potato into even pieces for uniform cooking. You can use ground turkey or chicken as a healthier alternative.
