Ingredients

- 2–3 ripe peaches
- 1 package Oaxaca cheese (about 6–8 ounces)
- 4 medium flour tortillas
- 1 tablespoon olive oil or melted butter
- A sprinkle of sea salt
- Optional: fresh cilantro, fresh basil, or arugula
- Optional: drizzle of honey or hot sauce
Instructions
- Slice peaches and toss with olive oil to coat.
- Grill peach slices for about 2 minutes on each side until they have grill marks.
- Let peaches cool slightly and shred the Oaxaca cheese.
- Lay a tortilla flat, sprinkle cheese, add grilled peaches, and optional herbs. Top with a second tortilla.
- Heat a skillet, optionally adding butter or oil. Cook quesadilla for 2-3 minutes on each side until golden and cheese is melted.
- Let it cool, slice into wedges, and serve.
Notes
Choose peaches that are firm enough to hold their shape. Use a nonstick pan or grill to prevent sticking. Don’t cut the quesadillas until they’ve cooled a bit to maintain their shape.
