Ingredients

  • 23 ripe peaches
  • 1 package Oaxaca cheese (about 68 ounces)
  • 4 medium flour tortillas
  • 1 tablespoon olive oil or melted butter
  • A sprinkle of sea salt
  • Optional: fresh cilantro, fresh basil, or arugula
  • Optional: drizzle of honey or hot sauce

Instructions

  1. Slice peaches and toss with olive oil to coat.
  2. Grill peach slices for about 2 minutes on each side until they have grill marks.
  3. Let peaches cool slightly and shred the Oaxaca cheese.
  4. Lay a tortilla flat, sprinkle cheese, add grilled peaches, and optional herbs. Top with a second tortilla.
  5. Heat a skillet, optionally adding butter or oil. Cook quesadilla for 2-3 minutes on each side until golden and cheese is melted.
  6. Let it cool, slice into wedges, and serve.

Notes

Choose peaches that are firm enough to hold their shape. Use a nonstick pan or grill to prevent sticking. Don’t cut the quesadillas until they’ve cooled a bit to maintain their shape.
