Ingredients

  • 2 medium Zucchini
  • 1 tablespoon Vegetable Oil
  • to taste Salt
  • to taste Pepper
  • 1 cup Corn
  • 1/2 cup Vegan Parmesan Cheese
  • 1/4 cup Vegan Sour Cream
  • to taste Hot Sauce
  • 1 teaspoon Paprika
  • 2 tablespoons Fresh Parsley

Instructions

  1. Preheat your grill to medium heat.
  2. Cut the zucchini in half lengthwise and scoop out the seeds to create a boat shape.
  3. Brush the zucchini with vegetable oil and sprinkle with salt and pepper.
  4. In a bowl, mix the corn, vegan Parmesan cheese, vegan sour cream, hot sauce, and paprika.
  5. Stuff the zucchini halves with the corn mixture.
  6. Place the stuffed zucchini on the grill and cook for about 10-15 minutes or until tender and slightly charred.
  7. Remove from the grill and garnish with fresh parsley before serving.

Notes

Choose firm zucchinis for the best results. Customize with other vegetables or spices as desired.
