- 2 medium Zucchini
- 1 tablespoon Vegetable Oil

- 1 cup Corn
- 1/2 cup Vegan Parmesan Cheese
- 1/4 cup Vegan Sour Cream
- to taste Hot Sauce
- 1 teaspoon Paprika
- 2 tablespoons Fresh Parsley
Instructions
- Preheat your grill to medium heat.
- Cut the zucchini in half lengthwise and scoop out the seeds to create a boat shape.
- Brush the zucchini with vegetable oil and sprinkle with salt and pepper.
- In a bowl, mix the corn, vegan Parmesan cheese, vegan sour cream, hot sauce, and paprika.
- Stuff the zucchini halves with the corn mixture.
- Place the stuffed zucchini on the grill and cook for about 10-15 minutes or until tender and slightly charred.
- Remove from the grill and garnish with fresh parsley before serving.
Notes
Choose firm zucchinis for the best results. Customize with other vegetables or spices as desired.
