Description

A delicious and simple recipe for grilled chicken drumsticks paired with crispy potatoes, perfect for summer barbecues.


Ingredients

  • 8 chicken drumsticks (bone-in, skin-on)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and black pepper to taste
  • 1 tbsp lemon juice
  • 1 tbsp honey (optional)
  • 4 medium potatoes (Yukon Gold or red)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp dried rosemary
  • Salt and black pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. In a bowl, combine chicken drumsticks with olive oil, garlic, paprika, onion powder, thyme, rosemary, salt, pepper, lemon juice, and honey (if using). Toss to coat and marinate for at least 30 minutes, or up to overnight for better flavor.
  2. Cut the potatoes into wedges. In another bowl, toss the potato wedges with olive oil, garlic powder, rosemary, salt, and pepper until they are evenly coated.
  3. Preheat the grill to medium-high heat (375°F – 400°F). Clean and oil the grill grates to prevent sticking.
  4. Place the potatoes on the cooler side of the grill (indirect heat) and cook for 20-25 minutes, flipping halfway through, until they are golden and crispy.
  5. While the potatoes are cooking, grill the marinated chicken drumsticks over direct heat for about 25-30 minutes, turning occasionally, until the chicken is cooked through.
  6. Once the chicken is fully cooked and the potatoes are crispy, remove them from the grill. Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley, if desired.

Notes

For extra flavor, marinate the chicken overnight. Ensure to oil the grill grates to prevent sticking. Turn the chicken and potatoes regularly on the grill for even cooking.
