Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup plain yogurt
  • 1 cucumber, grated and excess moisture squeezed out
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 4 whole wheat pita breads
  • Fresh vegetables (lettuce, tomato, onion) for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground turkey, breadcrumbs, parsley, dill, garlic, onion powder, salt, and pepper. Mix gently.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 25 minutes or until golden brown and cooked through.
  5. While the meatballs are baking, prepare the tzatziki by mixing yogurt, grated cucumber, lemon juice, and olive oil in a bowl.
  6. Once the meatballs are done, warm the pita breads in the oven for a few minutes.
  7. Assemble the gyros by stuffing the pita with meatballs, tzatziki, and fresh vegetables.

Notes

For best results, avoid over-mixing the meatball ingredients. Be sure to squeeze out the cucumber moisture to keep the tzatziki thick.
