- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup plain yogurt
- 1 cucumber, grated and excess moisture squeezed out
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 4 whole wheat pita breads
- Fresh vegetables (lettuce, tomato, onion) for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine ground turkey, breadcrumbs, parsley, dill, garlic, onion powder, salt, and pepper. Mix gently.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake for 25 minutes or until golden brown and cooked through.
- While the meatballs are baking, prepare the tzatziki by mixing yogurt, grated cucumber, lemon juice, and olive oil in a bowl.
- Once the meatballs are done, warm the pita breads in the oven for a few minutes.
- Assemble the gyros by stuffing the pita with meatballs, tzatziki, and fresh vegetables.
Notes
For best results, avoid over-mixing the meatball ingredients. Be sure to squeeze out the cucumber moisture to keep the tzatziki thick.
