Description

Ingredients

  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 2 cloves minced garlic

  • 2 cups cooked quinoa or rice
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red onion, diced
  • Tzatziki sauce
  • Feta cheese for garnish (optional)

Instructions

  1. Marinate chicken breast in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 1 hour.
  2. Cook the marinated chicken on a grill or skillet until golden brown and fully cooked (internal temperature of 165°F).
  3. Prepare the quinoa or rice as instructed.
  4. Assemble the bowls with cooked quinoa or rice, topped with diced cucumbers, tomatoes, red onion, and tzatziki sauce.
