- 2 cups stuffing mix
- 1 cup low-sodium chicken broth
- 2 large eggs
- 1 cup gravy (store-bought or homemade)
- 1/2 cup sautéed onions
- 1/2 cup sautéed celery
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, combine the stuffing mix and chicken broth. Let it sit for 5 minutes.
- Stir in the beaten eggs until well mixed.
- Fold in the sautéed onions and celery for added flavor.
- Fill each muffin cup about three-quarters full with the mixture.
- Create a well in the center of each muffin and spoon in the gravy.
- Bake for 25-30 minutes until the tops are golden brown.
- Let them cool slightly before serving.
Notes
These muffins are delicious on their own or as a side dish. Serve warm with extra gravy or alongside your favorite meats. They are also great for meal prep.
