Description

Nostalgic, buttery bar cookies with gooey butterscotch that stay soft for days. Perfect for school lunches or family gatherings.


Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch pan with parchment.
  2. Cream the butter and brown sugar until glossy.
  3. Beat in the eggs and vanilla until smooth.
  4. Whisk together the flour, baking powder, and salt.
  5. Fold the dry mixture into the wet mixture until just combined.
  6. Stir in the butterscotch chips.
  7. Press the batter evenly into the pan.
  8. Bake for 25–28 minutes until edges are golden and a toothpick comes out with a few moist crumbs.
  9. Cool completely in the pan for at least 45 minutes before slicing into bars.
