- 2 cups whole-milk ricotta
- 3 large eggs
- 1/2 cup honey (plus extra for serving)
- 1/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 2 tablespoons melted unsalted butter
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 pre-baked or unbaked 9-inch pie crust
- Toasted walnuts for garnish (optional)
Instructions
- Drain the ricotta in a fine-mesh sieve for 15–30 minutes.
- Blend the drained ricotta with eggs, honey, sugar, flour, melted butter, vanilla, and lemon zest until smooth.
- Pour the filling into the pie crust.
- Bake at 350°F (175°C) for 40–50 minutes until the center is just set.
- Cool on a rack to room temperature, then chill for at least 2 hours.
- Serve with a drizzle of honey and garnish as desired.
Notes
For best results, drain the ricotta thoroughly and use room-temperature eggs for a smooth filling. Adjust baking time based on the type of crust used.
