Description

Ingredients

  • 2 cups whole-milk ricotta
  • 3 large eggs
  • 1/2 cup honey (plus extra for serving)
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 pre-baked or unbaked 9-inch pie crust
  • Toasted walnuts for garnish (optional)

Instructions

  1. Drain the ricotta in a fine-mesh sieve for 15–30 minutes.
  2. Blend the drained ricotta with eggs, honey, sugar, flour, melted butter, vanilla, and lemon zest until smooth.
  3. Pour the filling into the pie crust.
  4. Bake at 350°F (175°C) for 40–50 minutes until the center is just set.
  5. Cool on a rack to room temperature, then chill for at least 2 hours.
  6. Serve with a drizzle of honey and garnish as desired.

Notes

For best results, drain the ricotta thoroughly and use room-temperature eggs for a smooth filling. Adjust baking time based on the type of crust used.
