A delicious dish that combines fluffy potato gnocchi with a rich and creamy carbonara sauce, perfect for busy weeknights or special occasions.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

  • Gnocchi
  • Bacon or pancetta
  • Eggs
  • Parmesan cheese
  • Heavy cream
  • Garlic
  • Black pepper
  • Salt
  • Parsley (for garnish)

Instructions

  1. Cook gnocchi according to package instructions. Drain and set aside.
  2. In a skillet, cook bacon or pancetta until crispy. Add minced garlic and sauté for a minute.
  3. In a bowl, whisk together eggs, cream, Parmesan cheese, salt, and black pepper.
  4. Add the cooked gnocchi to the skillet and toss to combine. Remove from heat and quickly mix in the egg mixture, stirring to create a creamy sauce.
  5. Serve immediately, garnished with parsley and additional Parmesan if desired.

Notes

Stir the egg mixture quickly with the gnocchi off the heat to prevent scrambling the eggs. Use freshly grated Parmesan cheese for the best taste. Feel free to add more black pepper to enhance the flavor.
