Description

Warmly spiced, crisp-edged gingerbread waffles made with molasses and ginger, perfect for holiday brunches.


Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 2 large eggs
  • 1/3 cup brown sugar
  • 1/3 cup melted butter (or neutral oil)
  • 1/3 cup molasses
  • 1 1/4 cups buttermilk
  • 1 tsp vanilla

Instructions

  1. Whisk dry ingredients in a large bowl.
  2. Mix wet ingredients in another bowl.
  3. Fold dry mix into wet until just combined.
  4. Preheat the waffle iron to medium-high and lightly oil the plates.
  5. Cook 3–5 minutes per waffle until golden and crisp.

Notes

Let the batter rest for 5–10 minutes for better texture. Make test waffles to adjust cooking time.
