- 1 cup pure pumpkin
- 1/2 cup butter, melted
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, combine the pumpkin, melted butter, brown sugar, granulated sugar, and eggs. Mix until smooth.
- In another bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, allspice, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently to combine. Be careful not to overmix.
- Fold in the chocolate chips evenly throughout the batter.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
- Once cool, dust with powdered sugar if desired, slice, and enjoy!
Notes
Use freshly ground spices for the best flavor. These bars can also be made gluten-free using a 1:1 baking flour blend.
