Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, mix the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, beat the softened butter and brown sugar until light and fluffy.
- Add molasses and eggs to the butter mixture, mixing until smooth.
- Gradually incorporate the dry ingredients into the wet mixture.
- Fill cupcake liners about 2/3 full and bake for 20 minutes, or until a toothpick comes out clean.
- Let the cupcakes cool completely before frosting.
- To make the frosting, beat cream cheese until fluffy, then mix in powdered sugar and vanilla.
- Frost cooled cupcakes as desired.
