- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 3/4 cup unsulfured molasses
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 1/2 tsp ground allspice
- Pinch of black pepper (optional)
- Zest of 1 orange (optional)
Instructions
- In a bowl, mix together the dry ingredients: flour, baking soda, ginger, cinnamon, allspice, and black pepper.
- In another bowl, cream together the softened butter and brown sugar.
- Add the egg, molasses, and vanilla extract to the wet mixture and combine.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Cover the dough and refrigerate for at least 2 hours or overnight.
- Preheat the oven to 350°F (175°C).
- Roll out the chilled dough to about 1/4 inch thickness on a floured surface.
- Use cookie cutters to cut out shapes and place them on a baking sheet.
- Bake for 8-10 minutes or until edges start to darken.
- Allow cookies to cool before decorating.
Notes
For best results, use real unsulfured molasses and chill the dough to prevent sticking. Roll dough between parchment paper for easier handling.
