- 1 cup brown sugar
- 1/2 cup molasses
- 4 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1 package cream cheese, softened
- 1 egg
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- Powdered sugar, for dusting
Instructions
- Cream the butter, brown sugar, and molasses together in a bowl.
- Gradually mix in the flour, ginger, cinnamon, and baking soda until well combined.
- Chill the dough for at least 30 minutes.
- In another bowl, mix the cream cheese, egg, granulated sugar, and vanilla until smooth.
- Preheat the oven to 350°F (175°C).
- Scoop the chilled dough and form half into a cookie, adding a dollop of cheesecake filling in the center.
- Top with another piece of cookie dough, sealing the edges.
- Bake for 12-15 minutes or until golden brown.
- Let cool and dust with powdered sugar before serving.
Notes
For a gluten-free version, use a gluten-free flour blend. Adjust baking time as necessary to avoid overbaking.
