Ingredients

  • 2 tablespoons unflavored powdered gelatin (~2024 g)
  • 1/2 cup cold water (120 ml)
  • 1 1/2 cups warm fruit juice, brewed tea, or water (360 ml)
  • 12 tablespoons honey (optional)
  • 1 teaspoon lemon juice (optional for flavor)

Instructions

  1. Bloom the gelatin: sprinkle gelatin over cold water and let sit for 3–5 minutes until spongy.
  2. Warm the chosen liquid (juice or tea) to about 120°F (49°C) — warm enough to dissolve but not boil.
  3. Stir the bloomed gelatin into the warm liquid until completely dissolved.
  4. Add fresh juice or citrus and stir to combine.
  5. Pour into a 9×5-inch loaf pan or silicone molds.
  6. Chill in the refrigerator at 35–40°F (2–4°C) for 2–4 hours until firm.
  7. Unmold or cut and serve.

Notes

For best texture, chill at 35–40°F. For variations, consider using agar-agar for a vegan option.
