A fun and delicious treat combining tender chicken, gooey mozzarella cheese, and crispy bacon, perfect for parties or family dinners.

Ingredients

  • 10 to 12 soft mozzarella balls (bocconcini or ciliegine)
  • 5 to 6 bacon strips, each cut in half
  • 2 big skinless, boneless chicken breasts, sliced into chunks about 2 inches wide
  • 1 teaspoon black pepper, ground
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 teaspoon Italian blend herb mix
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Chopped fresh parsley, 2 tablespoons (for topping, if you like)
  • Skewers, metal or wooden
  • Toothpicks (if you want to pin things together)

Instructions

  1. Preheat your oven or grill to 400°F (200°C) to get it nice and hot.
  2. In a bowl, add the chicken cubes and pour in the olive oil. Add the garlic powder, smoked paprika, Italian herb mix, pepper, and salt. Mix everything together with your hands until the chicken is well coated.
  3. Take each chicken chunk and lay it flat. Place a mozzarella ball in the center and wrap the chicken around it to hide the cheese.
  4. Next, take a piece of bacon and wrap it around the chicken-and-cheese ball. If it starts to fall apart, use a toothpick to hold it together.
  5. Thread three or four of the bacon-wrapped chicken bombs onto each skewer. Make sure not to cram them too close; give them some space.
  6. Place the skewers on your grill or in the oven. Cook for 20 to 25 minutes, turning them halfway through so they brown and get crispy on all sides.
  7. Once they’re done, take the skewers out and let them cool for a moment before removing the toothpicks. Sprinkle with chopped parsley if you like, and enjoy!

Notes

To prevent burning, soak wooden skewers in water for about 30 minutes before use. Feel free to add bell peppers or onion pieces between the chicken bombs for added flavor and crunch.
