Scale
- 1.5 lb lamb chops (about 8, 1-inch thick)
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tbsp chopped rosemary
- 1 tbsp chopped thyme
- 1 tsp Dijon mustard
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
Instructions

- Heat a heavy cast-iron skillet over medium-high heat with oil.
- Sear chops for 2–3 minutes on each side until a deep brown crust forms.
- Transfer the skillet to a preheated 400°F (200°C) oven for 6–8 minutes for medium-rare.
- Rest the chops for 5–7 minutes before serving.
Notes
For the best results, use an instant-read thermometer to check for doneness and let the chops rest before slicing.
