Instructions
- Parboil cubed potatoes in salted water until just tender, about 10 minutes.
- While potatoes cook, melt butter in a skillet and sauté minced garlic until fragrant.
- Drain the potatoes and toss them in the garlic butter to coat fully.
- Spread the coated potatoes on a baking sheet in a single layer.
- Roast in a preheated oven at 425°F (220°C) until golden brown and crispy, about 25 minutes.
- Garnish with freshly chopped parsley and serve warm.
Notes
For best results, use waxy potatoes and avoid overcrowding on the baking sheet to achieve crispiness.
