A moist and flavorful fruitcake combining dried fruits and warm spices, perfect for holiday celebrations.
Ingredients

- 2 cups mixed dried fruits
- 1 cup nuts (walnuts or pecans)
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup rum or juice
- 1/2 cup sugar
- 2 large eggs
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon salt
Instructions
- Soak the dried fruits in rum or juice for at least 8 hours or overnight.
- Preheat the oven to 325°F (160°C) and grease a loaf pan.
- In a bowl, mix the dry ingredients: flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, cream together the butter and sugar until fluffy.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the soaked fruits and nuts into the wet mixture.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 1 hour or until a toothpick inserted comes out clean.
- Allow the cake to cool before removing from the pan.
Notes
Wrap the cooled cake tightly in plastic and foil to keep it moist. Adjust spices according to your preference.
