- 4 large eggs, separated

Instructions
- Preheat your oven to 375°F (190°C) and grease your soufflé dish with butter.
- Cook sweet potatoes until tender, then mash until smooth.

- In a separate bowl, beat egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the sweet potato mixture in batches.
