- 4 large yellow onions, sliced
- 3 tablespoons butter
- 12 ounces pasta (fettuccine or penne recommended)
- 1 cup beef or vegetable broth
- 1 1/2 cups Gruyère cheese, shredded
- Salt and pepper to taste
- Fresh thyme, for garnish
Instructions
- In a large skillet, melt the butter over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally, until deeply caramelized, about 15-20 minutes.
- While the onions are caramelizing, cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the onions are caramelized, add the broth to the skillet and stir well.
- Add the drained pasta to the skillet, along with the shredded Gruyère cheese. Stir until the cheese melts and coats the pasta, creating a creamy sauce.
- Season with salt and pepper to taste. Serve in warmed bowls, topped with extra cheese and fresh thyme.
Notes
For added flavor, consider a splash of white wine while caramelizing the onions. Store leftovers in an airtight container for up to 3 days.
