Description

A comforting pasta dish combining the sweetness of caramelized onions with melted cheese, evoking the rich flavors of French onion soup.


Ingredients

  • 4 large yellow onions, sliced
  • 3 tablespoons butter
  • 12 ounces pasta (fettuccine or penne recommended)
  • 1 cup beef or vegetable broth
  • 1 1/2 cups Gruyère cheese, shredded
  • Salt and pepper to taste
  • Fresh thyme, for garnish

Instructions

  1. In a large skillet, melt the butter over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally, until deeply caramelized, about 15-20 minutes.
  2. While the onions are caramelizing, cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Once the onions are caramelized, add the broth to the skillet and stir well.
  4. Add the drained pasta to the skillet, along with the shredded Gruyère cheese. Stir until the cheese melts and coats the pasta, creating a creamy sauce.
  5. Season with salt and pepper to taste. Serve in warmed bowls, topped with extra cheese and fresh thyme.

Notes

For added flavor, consider a splash of white wine while caramelizing the onions. Store leftovers in an airtight container for up to 3 days.
