- 1.5 lbs flank steak (or top sirloin), thinly sliced
- 2 large yellow onions, thinly sliced
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 1/2 cup beef broth
- 1 cup shredded Gruyère cheese
- 2 tablespoons Dijon mustard
- 2 teaspoons olive oil (for brushing)
- Salt and pepper, to taste
Instructions
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add sliced onions and cook slowly, stirring occasionally, until golden brown (about 20-25 minutes).
- Add garlic, thyme, Worcestershire sauce, and beef broth. Simmer for 2-3 minutes, then remove from heat.
- Season beef slices with salt, pepper, and Dijon mustard.
- Spoon 1-2 tablespoons of the onion mixture onto each beef slice, top with shredded Gruyère cheese, then roll up and secure with toothpicks.
- In the same skillet, heat 2 teaspoons of olive oil. Brown the roll-ups on all sides (about 3-4 minutes).
- Transfer the roll-ups to a preheated 375°F (190°C) oven. Bake for 12-15 minutes or until beef is cooked through and cheese is melted.
- Let the roll-ups rest for a few minutes, remove toothpicks, and serve.
Notes
Serve with a fresh green salad or mashed potatoes. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
