Ingredients

  • 100g powdered sugar
  • 3 large egg whites
  • 70g granulated sugar
  • Food coloring (optional)
  • Filling of choice (e.g., buttercream, ganache, or jam)

Instructions

  1. Separate egg whites and let them age in the fridge for a day.
  2. Sift together almond flour and powdered sugar to eliminate lumps.
  3. Whip egg whites to soft peaks, then gradually add granulated sugar until stiff and glossy.
  4. Gently fold in the almond flour mixture until just combined.
  5. Pipe small circles onto baking sheets lined with silicone mats or parchment paper.
  6. Let the macarons rest until a skin forms on the surface.
  7. Bake in a preheated oven at 150°C (300°F) for about 15 minutes.
  8. Allow to cool completely before filling with your chosen filling.
