- 1 cup milk (whole or dairy-free alternative)
- 1/2 cup canned pumpkin puree
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Maple syrup for serving

- Chopped pecans or walnuts for serving
- Fresh berries for serving
Instructions
- In a large bowl, mix the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In another bowl, whisk together the milk, pumpkin puree, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; a few lumps are okay.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter.
Notes
For extra fluffiness, let the batter rest for about 5 minutes before cooking. You can add chocolate chips or nuts into the batter for variation.
