Description

Deliciously fluffy pancakes infused with pumpkin and warm spices, perfect for cozy mornings.


Ingredients

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1 cup milk (whole or dairy-free alternative)
  • 1/2 cup canned pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Maple syrup for serving
  • Whipped cream for serving
  • Chopped pecans or walnuts for serving
  • Fresh berries for serving

Instructions

  1. In a large bowl, mix the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  2. In another bowl, whisk together the milk, pumpkin puree, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  6. Repeat with the remaining batter.

Notes

For extra fluffiness, let the batter rest for about 5 minutes before cooking. You can add chocolate chips or nuts into the batter for variation.
