Delicious and healthy oat flour pancakes, gluten-free and perfect for breakfast or brunch.

- 1 cup oat flour
- 1 cup milk (or plant-based milk)
- 2 large eggs
- 2 tsp baking powder
- 1/4 tsp salt
- Maple syrup (for serving)
Instructions
- In a large mixing bowl, whisk together the oat flour, baking powder, and salt until well combined.
- Add the eggs and milk to the dry mixture, stirring gently until you achieve a smooth batter.
- Preheat a non-stick skillet over medium heat.
- Once hot, pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and let it cook until golden brown. Serve warm with maple syrup on top.
Notes
Serve with fresh fruit, yogurt, or your favorite nuts. To store, cool completely and place in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
