Description

Delightful pancakes combining fresh strawberries with soft, fluffy batter, perfect for brunch or special occasions.


Ingredients

  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ cup fresh strawberries, finely chopped
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch (optional for thicker compote)

Instructions

  1. In a large bowl, mix the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  4. Gently fold in the finely chopped strawberries.
  5. Heat a non-stick skillet over medium heat and lightly grease it.
  6. Pour ¼ cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. For the strawberry compote, combine the sliced strawberries, honey or maple syrup, lemon juice, and cornstarch (if using) in a small saucepan.
  8. Cook over medium heat, stirring gently, until the strawberries soften and the mixture thickens slightly.
  9. Serve pancakes warm, drizzled with warm strawberry compote and extra sliced strawberries on top.

Notes

For fluffier pancakes, avoid overmixing the batter. Ensure the skillet is hot enough before pouring in the batter.
