Description

A delightful low-carb bread that combines the richness of cottage cheese with the sweetness of blueberries, offering a light and airy texture perfect for breakfast or snacks.


Ingredients

  • 1 cup full-fat or low-fat cottage cheese
  • 3 large cold eggs
  • 1/4 cup sugar or sweetener of choice (e.g., honey, maple syrup, coconut sugar)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a blender, combine the cottage cheese, eggs, sugar or sweetener, vanilla extract, baking powder, and salt. Blend until smooth and creamy.
  3. Gently fold fresh blueberries into the batter by hand.
  4. Dollop the batter onto the prepared baking sheet in evenly sized rounds, leaving space between them.
  5. Bake for about 20 minutes, or until tops are golden and a toothpick inserted comes out clean.
  6. Let the cloud bread cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
