- 1 cup full-fat or low-fat cottage cheese
- 3 large cold eggs
- 1/4 cup sugar or sweetener of choice (e.g., honey, maple syrup, coconut sugar)
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- Pinch of salt
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a blender, combine the cottage cheese, eggs, sugar or sweetener, vanilla extract, baking powder, and salt. Blend until smooth and creamy.
- Gently fold fresh blueberries into the batter by hand.
- Dollop the batter onto the prepared baking sheet in evenly sized rounds, leaving space between them.
- Bake for about 20 minutes, or until tops are golden and a toothpick inserted comes out clean.
- Let the cloud bread cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
