Description
A playful mash-up of cinnamon rolls and crepes, these fluffy crepes are filled with a cinnamon-sugar mixture and topped with a sweet glaze.

- 1 cup all-purpose flour
- 2 tbsp sugar
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1 1/4 cups milk
- 2 large egg yolks
- 2 tbsp melted butter
- 2 egg whites
- 4 tbsp softened butter (for filling)
- 1/3 cup brown sugar
- 2 tsp ground cinnamon
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp milk (for glaze)
- 1/2 tsp vanilla (for glaze)
Instructions
- Whisk together the flour, sugar, salt, and baking powder in a bowl.
- In another bowl, mix milk, egg yolks, and melted butter; combine with dry ingredients to form a smooth batter.
- Beat egg whites to soft peaks and gently fold into the batter.
- Heat a nonstick skillet over medium heat and lightly oil.
- Pour 1/4 cup batter into the skillet, swirl thinly, and cook 45–60 seconds per side.
- For filling, mix butter, brown sugar, and cinnamon; spread on each crepe, roll tightly, and warm seam-side-down for 30 seconds.
- For glaze, whisk powdered sugar, milk, and vanilla until smooth and drizzle over warm crepes.
Notes
Resting the batter for 10 minutes helps create smoother crepes. Use a nonstick pan and a thin spatula for best results.
