Description

These muffins are fluffy, packed with apples, and rich in fiber—perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup applesauce
  • 2 large eggs
  • ½ cup milk
  • 2 cups diced apples

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the rolled oats, flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix together the applesauce, eggs, and milk.
  4. Combine the wet ingredients with the dry ingredients, then gently fold in the diced apples.
  5. Be careful not to overmix the batter.
  6. Scoop the mixture into the muffin tin and bake for about 20 minutes, until golden brown and a toothpick comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

For the best texture, use old-fashioned rolled oats. Store in an airtight container for up to 3 days at room temperature.
