- 1 cup rolled oats
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 1 cup applesauce
- 2 large eggs
- ½ cup milk
- 2 cups diced apples
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the rolled oats, flour, baking powder, cinnamon, and salt.
- In another bowl, mix together the applesauce, eggs, and milk.
- Combine the wet ingredients with the dry ingredients, then gently fold in the diced apples.
- Be careful not to overmix the batter.
- Scoop the mixture into the muffin tin and bake for about 20 minutes, until golden brown and a toothpick comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
Notes
For the best texture, use old-fashioned rolled oats. Store in an airtight container for up to 3 days at room temperature.
