- 2 Persian or English cucumbers, thinly sliced

- 1 tsp chili flakes or Sriracha
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp sugar (or honey)
- 1 tbsp toasted sesame oil
- 1 tbsp sesame seeds
- 2 green onions, sliced
Instructions
- In a large bowl, combine the cucumbers, garlic, chili flakes or Sriracha, rice vinegar, soy sauce, sugar, and sesame oil.
- Toss everything together until well coated.
- Let the salad sit for at least 10 minutes for flavors to meld.
- Top with sesame seeds and green onions before serving.
Notes
Best served cold. Add extra vegetables or herbs based on what you have on hand for more texture.
