Description

These Feel-Good Apple Muffins are fluffy, flavorful, and perfect for fall, featuring fresh apples and a hint of cinnamon without feeling heavy.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup melted butter or oil
  • 1 cup milk or yogurt
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar or maple syrup
  • 2 cups firm apples, grated or finely diced

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a bowl, whisk together the dry ingredients (flour, baking powder, baking soda, salt, spices).
  3. In another bowl, mix the wet ingredients (eggs, melted butter or oil, milk or yogurt, vanilla, and brown sugar or maple syrup).
  4. Fold the grated or diced apples into the wet mixture.
  5. Combine the wet and dry ingredients, mixing just until combined.
  6. Spoon the mixture into the muffin tin, topping with streusel if desired.
  7. Bake for 18-22 minutes or until a toothpick comes out clean.
  8. Cool on a wire rack.

Notes

For a caramelized finish, add a light cinnamon-sugar streusel topping before baking. Muffins can hold their texture for days and freeze well.
