Description

An easy, one-dish Fajita Chicken Casserole loaded with seasoned chicken, bell peppers, onions, and melted cheese.


Ingredients

Scale
  • 1.5 lbs cooked chicken, shredded or cubed
  • 2 bell peppers, sliced
  • 1 medium onion, sliced
  • 4 oz cream cheese, softened
  • 1.5 cups shredded Mexican cheese blend
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Sauté onions and peppers in olive oil until tender.
  3. In a bowl, combine chicken, sautéed veggies, cream cheese, and seasonings.
  4. Spread into greased baking dish and top with shredded cheese.
  5. Bake for 25–30 minutes until golden and bubbly.
  6. Garnish and serve warm.

Notes

Use pre-cooked shredded rotisserie chicken to save time. Let it rest 5 minutes before serving for easier scooping.
