Ingredients

- 1.5 lbs cooked chicken, shredded or cubed
- 2 bell peppers, sliced
- 1 medium onion, sliced
- 4 oz cream cheese, softened
- 1.5 cups shredded Mexican cheese blend
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Sauté onions and peppers in olive oil until tender.
- In a bowl, combine chicken, sautéed veggies, cream cheese, and seasonings.
- Spread into greased baking dish and top with shredded cheese.
- Bake for 25–30 minutes until golden and bubbly.
- Garnish and serve warm.
Notes
Use pre-cooked shredded rotisserie chicken to save time. Let it rest 5 minutes before serving for easier scooping.
