Description

These Enchilada Beef Sliders turn classic enchilada flavors into a fun, handheld weeknight meal with melty cheese and a tangy enchilada sauce.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 1 pound cooked, shredded beef (or browned ground beef)
  • 1/2 cup enchilada sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt to taste
  • 8 slider buns
  • 1 slice or 2 tablespoons shredded cheddar or Mexican blend cheese
  • 1 tablespoon melted butter

Instructions

  1. Heat vegetable oil in a skillet over medium-high heat and sauté onion until soft (about 4–5 minutes).
  2. Add shredded beef, enchilada sauce, chili powder, cumin, and salt; simmer for 3–4 minutes until the sauce thickens slightly.
  3. Split slider buns and spoon 2–3 tablespoons of the beef mixture onto each bottom bun.
  4. Top with cheese, replace bun tops, brush with melted butter.
  5. Bake in a preheated oven at 375°F (190°C) on a parchment-lined sheet for 12–15 minutes until cheese is melty and tops are golden.

Notes

Use slightly stale or day-old slider buns to prevent sogginess. For additional flavor, consider adding garlic butter before baking.
