Ingredients

  • 12 tablespoons dried chiles (for chile oil)

Instructions

  1. In a pot, heat olive oil over medium heat and sauté the chopped onions and garlic until fragrant.
  2. Add the diced tomatoes and let them simmer to create a flavorful base.
  3. Season the fish fillets with salt and pepper.
  4. Gently slide the fish into the simmering sauce and cook until the fish is opaque and flakes easily with a fork.
  5. To make the chile oil, heat additional olive oil and infuse it with dried chiles.
  6. Serve the fish over couscous or lentils, drizzled with chile oil and garnished with fresh herbs.
