Ingredients

Instructions
- In a pot, heat olive oil over medium heat and sauté the chopped onions and garlic until fragrant.
- Add the diced tomatoes and let them simmer to create a flavorful base.
- Season the fish fillets with salt and pepper.
- Gently slide the fish into the simmering sauce and cook until the fish is opaque and flakes easily with a fork.
- To make the chile oil, heat additional olive oil and infuse it with dried chiles.
- Serve the fish over couscous or lentils, drizzled with chile oil and garnished with fresh herbs.
